When talking about the Paleo Diet, which some people may find confusing due to simply not know exactly what it entails, what could be concluded is that it comes down to avoiding a few simple types of food: cereal grains, legumes, dairy, refined sugar, potatoes, processed foods, refined vegetable oils, and salt. As far as what is recommended to eat, the list includes eggs, fish, seafood, fresh fruits and veggies, healthful oils, nuts, and seeds, as well as grass-fed beef.

The reasoning behind Shaun’s decision to have her daughter follow the Paleo Diet is so that Grace has a good basis for her health in the future, and if she decides to quit it at a point when she understands her preferences – Shaun will be fine with it.
The Benefits of Her Diet Have Improved Grace’s Immune System
One of the benefits regarding Grace’s diet is that she has been ill only once. As far as how Grace handles other kids eating whatever they want, Shaun says: “If she eats a piece of bread I’m not going to have a conniption. She’s going to go to kids’ parties and eat what’s there. I’m never going to go to Grace, ‘You can’t eat anything at this party, but I packed you some kale, here you go’.”
Shaun has had a typical schedule for her daughter’s meals, for example, for breakfast Grace would have – “Eggs (fried in coconut oil, scrambled, or even poached) and left-over vegetables from the night before, including roasted sweet potato, carrots, potatoes and steamed broccoli” – Shaun states. And also, for lunch – “Organic roast chicken as well as roasted vegetables, including those mentioned before, and steamed vegetables such as broccoli if she feels like it.”
Her Own Struggle with Food Allergies Inspired Shaun Cooper to be Careful with Grace’s Diet
Shaun Cooper, as stated earlier, knows her fitness. She has even written an e-book on the subject of healthy recipes and is also a graduate in agricultural science. It is her firm belief that Grace’s infrequent colds are because of her healthy diet: “She spends a lot of time around other kids who are sick all the time – who have snotty noses, coughs, colds – but she just doesn’t pick it up.”
In conclusion, Shaun adds: “It’s certainly not because I’m shielding her from any of that stuff. I absolutely think a nutrient-dense diet is giving her a strong immune system.” On a side note, Shaun herself had struggled with food allergies throughout her life which made her reshape her diet. This meant avoiding dairy, gluten and processed foods which also eventually inspired her to be more careful about her daughter’s health from the start.
